Orange Cake with a Summer Soul (Vegan and Gluten-Free)

Hello sweet butterflies!

The other day, I bought a lot of oranges -lately I feel like eating oranges, and as it is still the season it’s perfect- and I thought that it would fit perfectly in a cake. But I also wanted to bring a summer feeling in this cake, so I used chickpea flour (yes yes it fits) and olive oil (it reminds me of southern France): I am bringing the mediterranean and sunny ingredients in my winter cake 🙂 The idea is to enjoy this cake in front of a fireplace, reading a book or watching a movie, relaxing, and thinking of the warm summer…

Here we go: Orange cake with a summer soul, vegan, gluten-free, egg-free and dairy-free

Serves 4-6 people

Ingredients:

-200 g of chickpea flour

120 g of brown sugar

-50 g of almond butter

-120 ml of olive oil

-100 ml of orange juice (accounts for the juice of 1 large orange)

-60 ml of almond milk

-1 table spoon of cider vinegar

-1 tea spoon of baking soda

-zest of 1 orange

How to proceed:

Pre-heat your oven at 180°C.

Mix the chickpea flour with the sugar and the baking soda. Add the zest, the almond butter, the olive oil, the orange juice, the almond milk and the cider vinegar. Mix it until you have an homogeneous dough.

Grease a mould and pour the dough, put in the oven for 30-40mins.

Let the cake cool down before you remove it from the mould, VOILA 😉

Perfect occasions for this cake:

-tea time

-for a dinner or lunch with friends/family

-for a birthday or any other celebration

Version Française

Ingrédients:

-200 g de farine de pois chiche

-120 g de sucre roux

-50 g de purée d’amandes non sucrée

-120 ml  d’huile d’olives

-100 ml de jus d’oranges

-60 ml de lait d’amandes

-1 cuillère à soupe de vinaigre de cidre

-1 cuillère à café de levure chimique

-les zestes d’une orange

Comment procéder:

Préchauffer votre four à 180 ° C.

Mélanger la farine de pois chiche avec le sucre roux et la levure chimique. Ajouter les zestes d’orange, la purée d’amandes non sucrée, l’huile d’olive, le jus d’orange, le lait d’amande et le vinaigre de cidre. Mélanger jusqu’à ce que vous avez une pâte homogène.

Graisser un moule et verser la pâte, cuire au four pendant 30-40mins.

Laisser le gâteau refroidir avant de le retirer du moule, VOILA;-)
